Not discounting those who have been diagnosed with celiac disease, though I do find it a bit questionable that so many have been diagnosed in the past few years compared to the previous decades, I found this Newsweek article on those trying to be Gluten-Free to be a recommended read.
What I personally think is that there are those out there who really do need to eat a Gluten-Free or reduce their gluten intake, but I also think that there are companies out there that are making a huge profit on products that do not contain gluten to capitalize on this latest health/diet focus.
