Eat your greens...

When all of my children lived at home I was not a fan of packaged salads because it was not cost effective compared to making my own salad mix. However, it was difficult at that point in time to find a variety of greens beyond romaine or iceberg in the winter time. Now of course the choices when it comes to bagged salads has changed, with more of a focus on phytonutrients in addition to stressing that people strive to meet their daily requirements of fruits and veggies.

Two new bagged salads on the market are by Fresh Express, Sweet Tender Greens™ and Tender Ruby™ Reds, I'm personally fond of the Tender Ruby™ Reds just as it comes out of the bag though there are quite a few ways you can dress up both of these salads to increase the plant-based nutrients and to increase the protein. I've become a fan of adding nuts in my salads, lately I've been on a sunflower seed kick but slivered almonds or candied walnuts make a great addition to a salad as well as pink grapefruit.

It can be a challenge to get children to eat enough servings of their daily vegetables, one easy way I've found that always worked was to let them pick what else they want on their salad, if you actually let them create their own? They are much more likely to at least try something new. This really good article by Elizabeth Somer gives you additional tips on how to reach at least 8 or more servings a day. There are some great recipes online, one site I recommend for learning more about phytonutrients and getting some new food ideas is www.phytolife.com. As an example, I'd never thought of adding pistachios to my salads, that's going to be the next thing I try.
